Classic Banana Bread

I made this simple banana bread with the intention of turning it into banana bread french toast. We had that for brunch a few years ago at The Waterlot in Bermuda. It. was. amazing. I had been wondering how and what they did to make it ever since! I came across this recipe that I wanted to try and, well, everyone ate the bread before I could even make it! Since they all loved it so much, I figured I’d post the recipe as a precursor to the Banana Bread French Toast and for anyone that needs a good basic recipe that you can then adjust and add to your taste. French toast recipe will be coming soon!

Ingredients:

  • 2 cups flour
  • 3/4 cup sugar
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon (optional)
  • 3 very ripe bananas, mashed (about 1 1/2 cups)
  • 1/4 cup buttermilk
  • 1 tsp vanilla
  • 2 eggs
  • 6 tbsp butter, melted and cooled

ADD-INS

  • 1/2 cup of walnuts or pecans
  • 1/2 cup chocolate chips or peanut butter chips
  • 1/2 cup sweetened coconut flakes

Directions:

  1. Preheat oven to 350°F
  2. Spray a loaf pan with nonstick spray
  3. Sift together the flour, sugar, baking soda, salt and cinnamon in a large bowl - set aside
  4. In a separate bowl, mix together the mashed bananas, buttermilk, eggs, butter and vanilla until well combined
  5. Gently fold the banana mixture into the dry ingredients until just combined and the mixture looks chunky (if you're adding in any of the 'add-ins' fold them in now)
  6. Pour the mixture into your prepped loaf pan and bake for 55 minutes or until a cake tester comes out clean
