Strawberry Shortcake Pops
Clearly, I’ve been very into pudding pops this summer and I’ve got one more rendition for you. These pops were inspired by those delicious ice cream truck treats that are all speckled with pink crunchies – you know the ones. These are just as easy to make as the others and offer up a nice fruity variety. Not gonna lie, banana is still my #1, but these are a close runner up. I think I’m enjoying this experimentation more than my kids.
Strawberry Shortcake Pops
Ingredients:
- 1 box vanilla JELL-O instant pudding
- 2 cups low fat milk
- 1 cup Cool Whip
- 2 cups strawberries, reserve a few to slice but puree the rest
- 1/2 cup vanilla Oreos or Nilla Wafers, chopped
Directions:
- In a medium bowl, mix together the pudding mix and 2 cups of milk (I used an electric mixer but it's not necessary)
- Add in 1 cup of Cool Whip and the pureed strawberries mix until well combined (at this point, I'd taste it to see if you want to add more strawberries to the mix)
- Fold in the strawberry chunks and cookie crumbs
- Pour the pudding mix into your popsicle molds and freeze for at least 4 hours or until they're solid
