Rolo Pretzel Bites
These treats are a great solution when you’re short on time and energy but want to make something tasty. They’re the perfect mix of salty and sweet and look really cute, making them a totally acceptable candidate for a holiday cookie swap. The most labor intensive and time consuming part of making these is unwrapping the Rolos – seriously. There’s really no good reason not to make these at least once.
INGREDIENTS
- 96 Square Butter Snap Pretzels
- 48 Rolos, unwrapped (if you’re not a fan of Rolos, you could substitute with mini Reese’s Peanut Butter Cups)
- Nonpareils for decorating, optional
HOW TO MAKE IT
- Preheat oven to 350°F
- Place 48 unbroken pretzel squares on a parchment paper (or aluminum foil) lined baking sheet
- Place 1 unwrapped Rolo on each square
- Place the baking sheet in the oven for 3-5 minutes – make sure they do not melt, you just want them softened (I found 3 minutes to be plenty)
- Take cookie sheet out of oven and quickly place another square pretzel on top of each softened Rolo and press slightly
- Sprinkle nonpareils on the “sandwich” before the chocolate cools too much
- Place the baking sheet in the refrigerator for approximately 30 minutes so the chocolate can harden (you can alternatively speed this up by placing in the freezer for 10 minutes or slow it down by leaving them out at room temperature until the chocolate has set)
