The Ultimate Ice Cream Sandwich

It starting to feel like summer is here, which obviously means it’s time to cue up the frozen treats. Enter: The Ultimate Ice Cream Sandwich – literally, every child (and adult’s) dream come true. An ice cream sandwich made of a chewy homemade brownie, soft homemade cookie with overloaded Oreo ice cream in between.

I should have found a way to get sprinkles in there because that would have really put these over the top, but there’s always next time. The bottom line is that quarantine is draining life out of everyone and these Ultimate Ice Cream Sandwiches will definitely infuse you with joy and happiness. Trust me, I know from experience.

The best thing about these bad boys is that I had all of the ingredients for the brownie and cookie layer in my pantry – only thing i needed to run to the gas station minimart to get was the Breyers Oreo Ice Cream. That is THE one you want, it is loaded with Oreos. So, these treats don’t require much advance planning and definitely don’t require any crazy ingredients.

The long weekend is the perfect time to have some fun in the kitchen and whip up a batch of The Ultimate Ice Cream Sandwich. Of course, you could substitute out a different flavor of ice cream if you prefer something else, it’s hard to go wrong when something is sandwiched in between brownie www.hayamix.com and cookie. I definitely see this desert making a repeat appearance, and I’m sure we’ll be experimenting with what kind of ice cream we use and how exactly we can add as many sprinkles as possible to these delicious treats. The Ultimate Ice Cream Sandwich

Ingredients

Brownie Layer

  • 10 tbsp unsalted butter, melted
  • 1 1/4 cups sugar
  • 3/4 cups unsweetened cocoa powder
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 1 large egg, room temp

Cookie Layer

  • 4 tbsp unsalted butter, room temp
  • 1/4 cup light brown sugar, lightly packed
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1 large egg, room temp
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 cup semi-sweet chocolate chips

Ice Cream

  • 1 quart Oreo ice cream, softened

Instructions

  • Preheat the oven to 350 F.  Fully line 2 9"x9" baking pans with parchment paper in both directions so you can easily remove the brownie and cookie layer from the pans.  I had the parchment paper coming up over the edge of the pan, creating a handle to lift the brownie/cookie out with.   (If you don't have 2 pans, just bake each layer separately.)

Brownie Layer

  • In a medium saucepan, melt the butter over medium-high heat.  Once it's melted, turn off the heat and whisk in the sugar and cocoa powder.
  • Add the salt, vanilla and egg and whisk to combine.  The batter will be nice and glossy.  
  • Lastly, add in the flour and mix well to fully incorporate it into the batter.
  • Pour the batter into the prepared pan and bake for 23 minutes.

Cookie Layer

  • Mix together the butter and sugar using a hand held mixer.  Beat the mixture until it's light and fluffy.  
  • Next, add in the vanilla and egg and mix well to combine.
  • In a small bowl, whisk together the flour, salt and baking soda.  Then slowly add the dry ingredients into the wet ingredients and mix to combine.  
  • Lastly, fold in the chocolate chips.  Pour the batter into the prepared baking pan.  It's a very thin layer of sticky cookie dough, so you'll need to use a spatula (and your clean fingers) to spread it evenly.  
  • Bake for 12-13 minutes.

Putting it All Together...

  • Once the brownie and cookie layers have COMPLETELY cooled, it's time to assemble the ice cream sandwich.
  • Carefully remove the brownie layer and flip it over back into a freshly parchment paper lined pan.   You want the "pretty" side of the brownie layer to be facing outward.  Next, evenly spread the ice cream all over the brownie layer.  Lastly, top with your cookie layer!  Cover tightly with aluminum foil and freeze for 4 hours or until it's frozen solid.  
  • Remove the big square ice cream sandwich from the pan and cut into 16 squares - enjoy!
