Strawberry Frozen Yogurt
So, I finally caved in and bought an ice cream machine! This might have been a bad idea…. I’m at least starting off healthy, although I know full well that I will be creating my childhood fantasy flavors in a couple of weeks… or days. This tasty treat is guilt free and delicious – if you have an ice cream machine, give it a go – if not, I’m pretty sure you can make ice cream without one, too!
INGREDIENTS
- 1 pound strawberries, rinsed and hulled
- 2/3 cup sugar
- Optional: 2 teaspoons vodka or kirsch (this keeps the yogurt from freezing too hard)
- 1 cup plain whole milk yogurt
- 1 teaspoon fresh lemon juice
HOW TO MAKE IT
- Slice the strawberries into small pieces
- Place strawberries into a bowl with the sugar and vodka or kirsch (if using) until the sugar begins to dissolve
- Cover with plastic wrap and let stand at room temperature for at least 1 hour, stirring every so often
- Transfer the strawberries and their juice to a blender or food processor
- Add the yogurt and fresh lemon juice
- Pulse the machine until the mixture is pretty much smooth – I left a few chunks just for texture, but if you want it really smooth you could press mixture through a mesh strainer to remove any seeds
- Chill for 1 hour, then freeze in your ice cream maker according to the manufacturer’s instructions
